If you think you know dark chocolate, think again. The flavors expressed in cacao vary greatly depending on the region where the beans are grown. We picked four different chocolate makers using cacao from four different regions to showcase in Nöje's Sweet Chocolate Box this month to take you deeper into the world of dark chocolate.
We suggest starting with the bar containing the lowest cacao percentage, and working your way up to the darkest chocolate in the box taking sips of sparkling water in between bites to cleanse your palate. First, savor Askinosie's 62% Dark Milk Chocolate with Fleur de Sel made with cacao from Davao, Philippines taking note of the silky, slightly salty caramel flavor. Next, try Ritual's 75% Belize origin chocolate with a hint of cherry and fig notes, followed by Twenty-Four Blackbirds 75% Madagascar bar expressing the berry and citrus side of cacao. Finish your flight with Fruition 76% Marañón bar featuring cacao from Peru with a toasted nut flavor profile.
